Coconut Chicken Stir Fry, a healthy and delicious choice for lunch or dinner.

Ingredients

2 cups low GI vegetables

150g chicken breast

1 small tin low fat coconut milk

1 salt reduced vegetable stock cube

fresh coriander

pepper

shallots

How to make Coconut Chicken Stir Fry

  • Brown chicken and shallots
  • Add in the rest if veggies, coconut milk and stock cube.
  • Simmer for 20 mins.
  • Serve with fresh coriander on top and pepper to taste.
