Raw Coconut and Lemon Slice
Ingredients
1 c Almonds
1 c Cashews
1 c Desicated Coconut
1/4 c Natvia
4 tsp Chai Seeds
9 Pitted Dates
1 Lemon
2/3 c Natvia Icing Sugar
2 tbs Coconut Cream
2 tsp Coconut Oil
Extra Sprinkles Of Coconut
How To Make Coconut Lemon Slice
- Soak nuts in water for at least 2 hours
- In a high powered blender blitz nuts, coconut, lemon rind from the lemon, natvia and chia seeds until fine
- Add dates and lemon juice slowly until mixture comes together into a dough
- Press mixture evenly into a square lined tin and put in freezer
- Blend icing sugar, 1 tsp lemon juice, coconut cream, coconut oil together until smooth
- Spread evenly over base and sprinkle with coconut.
